David Stevens-Castro is a Chilean Agricultural Scientist who has worked extensively as a award-winning Sommelier in Australia. He’s currently our Wine and Beverage Manager.
David was born into a family deeply involved in the wine industry. Several of his relatives are fruit growers, as are many of his friends back home. He grew up witnessing the fast development of Chile’s most prominent wine laboratory, VINOLAB, which is owned and operated by his Uncle & Auntie who are also winemakers. They lead a team that analyses & certifies more than 70% of the Chilean wine export industry as well as agrochemicals, fertilizers and food.
In 2005 David completed a Honours degree in Agricultural Science, majoring in Fruticulture and Enology (winemaking) in the Faculty of Agronomy & Forestry of the prestigious Pontifical Catholic University of Santiago, Chile, before he left Chile to follow his dream of becoming a flying winemaker. He has lived in Australia since 2007 and nowadays is based on the Gold Coast and a stage 2 student in the revered Institute of Masters of Wine programme.
David has a passion for educating about wine to a general audience as well as those already in-the-know. Co-authoring a Gourmand 2016 World Award-winning recipe book ‘Paired: Champagne and Sparking Wines’ (The food and wine matching recipe book for everyone) with photographer/designer wife, Flynn Fran, he has also written many articles for popular publications including WineState, Alquimie and The Lifestyle Channel – Food.

For degustation menus and special occasions, bookings are essential. For private dining, a minimum spend applies.
