Service is always impeccable. The staff is always keen to share their knowledge of wine and food pairing. Our Wine and Beverage Manager, David Stevens-Castro is an Agricultural Scientist originally from Chile who has worked extensively as an award-winning Sommelier in Australia. David has a passion for educating about wine to a general audience as well as those already in-the-know. He is an influential member of the Australian wine trade and his personal connections allow us to offer unique events, with impeccable food and wine matching always treated as a top a priority.

Megan Cox

Assistant Wine & Beverage Manager

Megan has extensive experience with food and is passionate about wine. “Wine is really romantic. It’s ever evolving and you never stop learning,” Megan said. “Growing up on a farm, we were passionate about plants. This has extended into my appreciation for wine….how soil and climate conditions can influence wine.” Megan has previously held roles at a number of esteemed dining venues including Rockpool Bar & Grill in Sydney. Megan’s advice, “Don’t be afraid to say what you like. Wine changes based on what you had for lunch, if it’s hot, or a just opened bottle – wine appreciation is very individual.” “There’s wine as a commodity and wine for appreciation, all have an equal place,” Megan said.
